Chinese noodles - Zha Jiang Mian


I had to eat dinner alone for 13 days as Takashi is working in Germany.

Its time for me to experiment new recipes when he`s not around.

Tonight, I decided to cook Zha jiang mian.

Its a simple one dish meal with meat and vegetables.

Always try to make my food look interesting and forget about the loneliness of eating alone.

Besides I'd like to try the last two dishes you described on your blog. Would you please post the recipes for those?

For the Chijimi you stated to use pork and seafood. Well what did you choose to put in?

And for the Zha Jiang Mian, how did you do it? As I am from Germany I am not very familiar with asian cooking but would love to try out those cause they look really delicious on your photos! :)

My recipe

Zha Jiang Mian (for 1)

Chinese yellow noodles 1 pack
minced pork 80g
shitake
chinese leek
bean sprouts
cucumber
Tian mian jiang sauce/ hoisin sauce/

1. First dice up the shitake and leek
2. Boil the bean sprouts in water for 30sec
3. Slice the cucumber into thin strips
4. Heat the pan and fry the mince pork till golden brown. Then add 1 table spoon of sauce called `Tian mian Jiang` . If you cant find this, I heard some people replaced this sauce with `Hoisin Sauce` .
5. Mix well and add in the shitake and leek. Fry well
6. Add in a mixture of chicken stock soup 1 cup, soya sauce 2 teaspoons, 1 teaspoon chinese/ japanese wine, 1 teaspoon sugar and a dash of pepper.
7. boil for a few mins and add cornflour mixture to thicken.
8. Boil the chinese noodles for 1 min.
9. Dish out and mix with 1 teaspoon of seaseme oil.
10. Pour the sauce over the noodles and garnish with bean sprouts and cucumber.
11. Enjoy

For the chijimi, I added octopus and leek only..You can add in anything. kimichi too...When the oyster season arrives next month, I will add in oysters.

For the dipping sauce, you can try
soy sauce, vinegar, sesame oil, korean chilli paste, sesame seeds.
